Makes: 12 small muffins, or one loaf.
Ingredients
Dry:
- 1 1⁄2 cup AP Flour
- 1⁄4 tsp salt
- Walnuts, Chocolate Chips, etc. (optional)
Wet:
- 1 cup white sugar
- 1 egg
- 1⁄2 cup oil (neutral oil like canola/veg)
- 2 cups bananas (3-4 metric banans)
Risers:
- 2 Tbsp hot water
- 1 tsp baking soda
Steps
- Mash and combine wet ingredients.
- Add wet ingredients to dry and fold to combine. (avoid overmixing)
- Mix the hot water and baking soda together, then combine it with the rest of the batter (again, avoid overmixing)
- Use a disher to scoop batter into WELL GREASED muffin tin wells, cupcake papers in a muffin tin, or a WELL GREASED loaf pan.
- Bake at 350F for 25-30 minutes for muffins, or 30-40 minutes for a loaf. (Toothpick should come out clean) Let cool slightly on a wire rack.
