Gram’s Banana Bread

Makes: 12 small muffins, or one loaf.

Ingredients

Dry:

  • 1 1⁄2 cup AP Flour
  • 1⁄4 tsp salt
  • Walnuts, Chocolate Chips, etc. (optional)

Wet:

  • 1 cup white sugar
  • 1 egg
  • 1⁄2 cup oil (neutral oil like canola/veg)
  • 2 cups bananas (3-4 metric banans)

Risers:

  • 2 Tbsp hot water
  • 1 tsp baking soda

Steps

  1. Mash and combine wet ingredients.
  2. Add wet ingredients to dry and fold to combine. (avoid overmixing)
  3. Mix the hot water and baking soda together, then combine it with the rest of the batter (again, avoid overmixing)
  4. Use a disher to scoop batter into WELL GREASED muffin tin wells, cupcake papers in a muffin tin, or a WELL GREASED loaf pan.
  5. Bake at 350F for 25-30 minutes for muffins, or 30-40 minutes for a loaf. (Toothpick should come out clean) Let cool slightly on a wire rack.
